- Some notes to avoid kimchi being too salty:- Use no more than the recommended amount of salt to soften the cabbage- Use coarse salt when softening the cabbage for better taste- Marinate the cabbage with salt for no more than 2 hours, rinse 4-5 times with water to remove the saltiness (test again to see if the cabbage is still salty) and squeeze lightly to drain the water to avoid making the kimchi too salty and watery when making salted kimchi.
- Note to avoid kimchi from being sour:- If you like the kimchi to be moderately sour, leave it to ferment outside for 24 hours, then put it in the refrigerator.- If you like the kimchi to be very sour, leave it for > 24 hours, then put it in the refrigerator.- If you don't want it to be too sour, reduce the fermentation time to <24 hours, then put it in the refrigerator.
- Note about kimchi spiciness:- Kim Chi Barona salt sauce is researched with a moderate spicy taste so that everyone can enjoy it, if you like a lot of spicy taste, you can add Korean chili powder as you like while mixing. Kimchi salt sauce with cabbage.
